Coddled Egg

The best way to take a basic egg to the next level.

Ingredients

  • 2 eggs
  • 1 cup of grits (cooked) 
  • 1.5 cups of uncooked spinach
  • 1 cup of uncooked bella mushrooms 
  • 1 small shallot 
  • 2 garlic cloves 
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350 degrees.
  2. Over medium heat, sauté spinach, chopped mushrooms & chopped garlic in 1 tbsp olive oil.
  3. Season with salt and pepper and remove from the pan.
  4. Divide the grits between two ramekins or oven-safe coffee mugs.
  5. Top the grits with the spinach & mushroom mixture.
  6. Crack one whole egg into each ramekin.
  7. Season the egg with salt and pepper.
  8. Place the ramekins into a deep roasting pan and pour hot water into the pan until approximately half of the ramekins are submerged.
  9. Place tray in oven and bake 12 – 15 minutes until egg whites firm up and yolks are still runny.
  10. Carefully remove hot ramekins from the roasting pan and serve.
