Happy Fall! There’s a crispness in the air which only means that it must be time for some homecooked classic chili. To be perfectly honest, after feeling pretty rough for the past few months (thanks, first trimester :), I wasn’t sure if I was going to be able to enjoy one of my favorite dishes this year — but, on one random evening, the thought of some hearty chili actually sounded good so we went with it.

My husband has won a few chili making contests (applause) so he loves making it many different ways. However, my favorite version is basic, simple and classic. Nothing fancy, but it hits the spot, and of course, you can add your own personal touch with some extra ingredients if you so desire. Another bonus – my kids EAT it. I’ve mentioned this before, but they are PICKY (I’ve failed at expanding the culinary palettes of my kiddos) so getting them to try something other than hot dogs and grilled cheese is always a win.

Classic Chili

Ingredients

Chili

  • 2 lbs. ground beef
  • 3 celery stalks chopped
  • 2 cloves garlic (finely chopped)
  • 2 red peppers chopped
  • 1 onion chopped
  • 115 oz can corn
  • 115 oz can black beans
  • 114.5 oz petite diced tomatoes
  • Tomato juice (32 – 64 oz depending on how ‘soupy’ you like your chili)
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tbsp chili powder
  • Salt & pepper to taste

Chili Toppings (optional)Β 

  • Cheddar cheese
  • Chopped scallions
  • Sour cream
  • Oyster crackers

 

Instructions

  1. Brown ground beef in Dutch oven
  2. Move browned ground beef to one half of Dutch oven & saute chopped celery, garlic, onion & red pepper in olive oil (1-2 min)
  3. Add tomato juice & diced tomatoes to Dutch oven followed by cumin, salt & pepper
  4. Let simmer for approximately 30 minutes before adding black beans and corn, continue to simmer for an additional 20 minutes
  5. Serve & garnish with your choice of toppings!
