- 2 lbs. ground beef
- 3 celery stalks chopped
- 2 cloves garlic (finely chopped)
- 2 red peppers chopped
- 1 onion chopped
- 1 – 15 oz can corn
- 1 – 15 oz can black beans
- 1 – 14.5 oz petite diced tomatoes
- Tomato juice (32 – 64 oz depending on how ‘soupy’ you like your chili)
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tbsp chili powder
- Salt & pepper to taste

- Chopped scallions
